I made a beer butt chicken today and we ate all we could. Going to de-bone it and we need a recipe that would be good to use for the remainder. We are not big fans of chicken soup or chicken and noodles or dumplings. Game to try about anything else though! THanks
 
Easy! Dice the meat, Toss in some diced veggies, i.e. celery, onion, bell pepper, whatever veggies your family likes, then mix it all together with a dollop or two of mayonnaise, add a small bit of mustard or italian dressing, GENTLY fold in some halved red grapes.... Viola! you have a wonderful chicken salad to serve with crackers or on toasted wheat buns or stuffed into pocket bread with a lettuce leaf and tomato slice ... or.....

you can make it into a cassorole. Just add cheese and any veggies you like. You can add it to mac and cheese also.
 
this is one of my go to dishes but i do it in the oven

Crockpot Chicken Divan

Chicken breasts in a creamy sauce with broccoli.

1 package frozen broccoli spears
2 to 3 chicken breast, boneless, skinless
1 can cream of chicken soup
1 c shredded swiss cheese
1 Tbsp dijon mustard
1-1/4 cup mayonnaise
1 teaspoon lemon juice
swiss cheese for topping
Place broccoli in the bottom of slow cooker. Put chicken on top of broccoli.
Mix together remaining ingredients Pour over chicken. Cover and cook on
low for 8 hours. top with remiening cheese in last 15 minutes


I always thought this sounded good but havent tried it yet, thought I would replace some of the chicken with egg noodles though.

2 (10-ounce) packages frozen chopped spinach
6 chicken breast halves (about 4 pounds), cooked, boned, and shredded
2 (10 3/4-ounce) cans condensed cream of mushroom soup
1 cup mayonnaise
1 cup sour cream
2 cup grated sharp Cheddar
2 tablespoons fresh lemon juice
1 teaspoon curry powder
Salt and freshly ground black pepper
1/2 cup dry white wine
1/2 cup freshly grated Parmesan
1/2 cup soft bread crumbs
2 tablespoons butter

Remove the outer wrappers from the box of spinach. Open 1 end of each box. Microwave on full power for 2 minutes, until thawed. Drain the spinach and put into a large bowl. Add the shredded chicken.

In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the spinach and chicken. Mix well with a spatula.

Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan and bread crumbs and sprinkle over the top. Dot with the butter.

Wrap the uncooked casserole securely with plastic wrap, then with aluminum foil. Place each pan into a plastic freezer bag and seal. Place into freezer.
Allow casserole to thaw 24 hours in refrigerator. When ready to bake, remove the plastic wrap and foil. Bake uncovered at 350 degrees F for about 30 minutes until bubbly.
 
Do you like fried rice?

Cube chicken, cut green onions on the bias, finely chiffonade some type of tender greens, slice some ginger, and have some cooked rice, plus a scrambled egg or 2. I also like some fresh or frozen peas, canned won't do.

You can also do the following, if you like: Finely shred a small carrot and/or chop water chestnuts. I've had it with some pieces of mushroom in it, too.

Have soy sauce and any other spices you like ready. A small amount of toasted sesame seed oil is good.

Start cooking raw vegetables in a wok, or very hot skillet with oil and slices of ginger in it.

When they are getting done, add chicken.

Finally, put in egg, rice, and frozen peas, if using.

Add soy sauce or sauce mix, (We usually mix liquid flavorings together in a bowl, then add all at once. If you add sugar, white wine [op], and garlic, you have teriyaki sauce.) and cook until done. Serve immediately.

How about pot pie?

Do you eat any pasta with chicken?

You can add the chicken to a rich, thick tomato sauce, and serve over spaghetti for a caccitore.

If there is breast meat to slice, I'd probably want a chicken sandwich! Either with mayonnaise, salt, pepper etc., or barbequed. Just spread some thick barbecue sauce on the bread, and go from there!

Well, that's just off the top of my head, at a late hour! I'm sure you'll find a good recipe. My first thought was what someone else said....chicken salad, though fried rice is right up there, as are the sandwiches!

I have a quick chicken salad from a gourmet shop that used to be in Springfield... dice up the chicken into chunks, add diced celery, halved grapes, pecan pieces..mix with mayo and about 2 tbls. of honey, salt and pepper. Stuff your favorite roll with it. This has always been one that people ask for the recipe.
 
Dice it up, add the ingredients you like for a chicken salad and put it in scooped out tomato cups or sweet bell pepper cups...nice summer dish for lunch or dinner on the patio....
