Need Sausage seasoning recipes

Hubby made the sausage last night, and cooked it up this morning. 1.5# of bear meat (20% pork fat content), and followed the recipe exactly with the exception of the red pepper flakes (I was out). OMG, OMG, OMG, OMG...

I came in from doing the morning rounds and the house smelled SO good!!!
 
Yep it did smell good and I loved my first batch that I made some homemade sausage pizza out of it. It was good!

No problem, I got some bacon fat from our butcher and it was lightly smoked.

Will be grinding them tomorrow!
 
For some reason I was thinking about sausage making waaaay to early this morning and wanted to post this suggestion:

put all your sausage seasoning herbs, spices, salt, pepper, etc. in a small bowl and mix them well with a fork or whisk; then sprinkle half of the seasoning mix over your cubes of pork or ground pork, toss well to blend with the pork, then sprinkle the rest of the spice mix on the meat and stir/toss to coat the meat evenly. Now you are ready to grind if using cubes or form patties or freeze in bulk if using already ground pork.

Thanks Al I would certainly give this a try when my stores have this pork butt on sale!

That would go wonderfully with my Italian sausage soup!
