Your new chicks are very cute! I suggest taking a look at their breed reviews for tips on raising them and personal experiences with them:

Brahma
Plymouth Rock

You'll be pretty certain on gender when they are around 8 weeks old. Rapidly reddening combs and slower feather growth are two signs to look out for that could mean cockerel.
