Here in the US they wash eggs in bleach (very unhealthy as it permeates the egg) and refrigerate them. In Europe, they do not wash or refrigerate them as they know that an unwashed egg is protected. Why doesn't the USDA know this - or you know, anything else? I have an egg skelter - sort of an egg roller coaster - that I bought from England - I don't think they make them in this country, ensures you always use your oldest egg first and they all move down from there.

I should also mention that I added sand to my run about a month ago and even with record breaking rain this spring the eggs are very clean. No more muddy eggs. It reay makes the display look nice with clean eggs.
