Some folks use "roll away" nest boxes," to protect the eggs from egg eaters. After a hen lays an egg it rolls away from her reach and be safely away, until someone collects them.

Sometimes they are just opportunistic egg eaters; if an egg gets rolled out or stepped on and cracked, they will eat it. I think hens who purposely break and snack on the eggs are rare. A camera pointed at the nests can help you determine if this is so. If the eggs are getting rolled out or stepped on, you may need better padding or more or more tempting nesting areas so they don't all try to lay in the same box.
