New to chickens and my chicken is acting unwell

I would gather her up and see if she will drink for you. See if her crop is empty in the morning.

The crop is located on the right side of the breast. It feels like a pouch under the skin. When a bird has been eating/drinking you should feel a bulge because food/water is "stored" there. It's normal for the crop to be "full" when the hen goes to roost, but after a night of sleep, it should be flat or empty. If it's not empty, then let us know.
It should not hurt, the hen for you to feel of her crop, so don't worry about that.
So this morning her crop was empty. I was able to syringe her some water last night and this morning she drank a little bit still no interest in food. I feed them layer pellets and treats like mealworms and some fresh foods and they have access to oyster shells. I’ve had them for 3 weeks! Thank you for your help. I’ve posted a picture of ginger and her poop yesterday

It's best to get a fecal float, but if that's not possible, then I would be inclined to treat for Coccidiosis and worms.
She's new to the property, so Coccidiosis could be an issue. The poop is a little mucousy.

Corid (Amprolium) can be found at TSC in the cattle section. Liquid Corid dose is 2tsp per gallon of water or Powdered Corid is 1 1/2 tsp per gallon of water. Give for 5-7 days as the only source of drinking water.
I would treat all (2?) new hens with the Corid, it won't hurt them.

For de-worming, you can use Safeguard liquid goat dewormer (found at TSC). Dose is .23ml per pound of weight given orally once a day for 5 days in row.

You can treat with Corid and deworm at the same time.

This is where I would start since she did lay an egg and her crop is emptying.
She may have something else going on, there's so many things that it could be.
If you haven't done so, check her over and the other one over for lice/mites as well. Look for little crawling bugs around the vent, at the top of the tail around the oil gland (there's a little bump there you will see), under the wings, etc.

Okay, thank you very much for the advice! We will have to head to the vet, I’m in Canada and I believe the only place I can get amprolium is from them. No visible mites around the vents on either but I did find 2 little white bugs on my shirt after handling them. Could those be mites?
 
White or tannish looking bugs are probably lice/louse.
Since you are in Canada, ask your vet if they have louse/mite powder or spray they can give you.
It seems like a lot of folks have a hard time getting something like a Permethrin based poultry dust/spray there.
 
You mentioned that it was hot out. She could be having a heat stroke. I lost a silkie to this...
If you put her in front of a fan (not to close) while she is still outside, it should help. put electrolytes in her water to boost up alertness and to help her with the stress and shock. the reason why to keep her outside in front of fan is because we don't want to put her in more shock then she probably already is.
