New to chickens, assistance needed in picking breed

Our girls have been good layers, and they are cold hardy. They are quiet, and pretty laid back.

Since we're on the topic...I'm quite obsessed with froofy Faverolles at the moment - anyone have experience with these hens? They seem really nice and good layers. My husband wants a Polish but we are a little concerned that one might fly over the 4-foot fence surrounding our yard and wind up at the neighbor's (who has a mean dog).
 
Mean dogs are an issue. There is always the option of clipping one of their wings, but then it leaves them vulnerable to predators....
Any way that you can raise the fence so you can get the chickens you want?
 
Unfortunately, we can't raise it...but the predator situation in our own yard is pretty nonexistent and i close the girls in for the night. The Cochins and 'Lorps can't really fly anyway (unless they are "flapping horizontally" as they run!) Will consider the wing clipping - thanks for the recommendation.

I waited to butcher them until October to avoid the flies. As a newbie, I purposely bought them in February to give them lots of time to grow! (Later learned that they're pretty well full grown at 6 months

Well then if the RIR's end up being too feisty, I'll be freezing some chickens in July for winter chicken noodle soup!
