New to egg hatching with an Incubator?

Yes, you can. Humidity should be 40% to 50%, temperature 99.3F to 99.6F.

I run a Brinsea for incubating and another for hatching. At any given time I'm incubating bantam eggs with large fowl egg. I mostly hatch Ameraucana and bantam Ameraucana.

I see you have Appenzeller Spitzhauben...Its on my wish list.. How do you like this breed? are they a good dual purpose?

They are great birds but they are not dual purpose. If you want dual purpose crested go with Crevecoeur. They have great personality as well.

Thats super smart, I like it lol if this becomes a new favorite habit I will do the same, It make sense as you have to up the humidity to 70 if im not mistaken...is that correct? do I also need to up the heat?

Just the humidity. Test your incubator for temperature and humidity before starting the eggs.

The one I hatch in I have to put the temp at 103 to hit 99.5.

My 9 year old loves that breed lol im just not sure how they would do in our cold climate... We live in Zone 2 in Canada we can get into -50C but not often, our average winter is -20 to -30 for a few month. What are your thoughts?

From what I know I believe they Spitzhauben do better in cold. I'm pretty sure the Crevecoeur should as well but I need to look it up.
