Hay can help trap warm air on the floor if you bed with it. When it is due to get cold, it helps to clean out the old bedding and replace it with new so that there is less moisture in the air. Helps prevent frost bite on those cold damp nights.

I don't care for straw. It mats to easily and stays damp.

Wood shavings make excellent coop bedding. Thick, fluffy, dry, warm, easy to clean. It's all I've ever used. I keep a thick layer down and just add more on top occasionally. I remove poop from under the roosts every morning and the rest of the coop stays pretty clean. I strip it out once or twice a year.

I use wood shavings for my chickens' bedding, and always have. Wood shavings are denser than straw, and I think that they work better than straw as bedding. I occaisonally put straw down in the run during winter, but wood shavings are the only things I use in the hen house.
