Awesome! yes they are a very unique looking breed of cattle! Many people think they are pushed hormones due to the aggressive look of their muscling but in fact they have a naturally mutated myostatin gene that converts a high volume of the protein they consume into muscle! The marbling in the meat is much less than that of an angus steak but the meat is actually fine fibered and believe it or not is incredibly tender! I can cut my steaks with a fork :D. we cross our fullblood bull with angus cows. those offspring are what we feed out to butcher! the hamburger is usually around 92 to 95 percent lean! We go as natural as we can so they never receive any growth hormones and are grass/ hay fed and grain finished!
