Hello and welcome from Southeast Tennessee! Sounds like you live in a beautiful place. For colorful eggs I love Easter eggers (blue or green usually), welsummers (speckled), and marans (dark brown). I don't know how cold-hardy those breeds are as our winters are pretty wimpy. I would think most Easter eggers would do okay in cold weather as they tend to have smaller combs/waddles (so less likely to get frostbite). You've likely already discovered this, but many of the major online hatcheries have breeds divided into categories like cold or heat tolerant, friendly, best layers, colorful eggs ect.
