I have 9 Cornish X that are 3 weeks old, and they poop a ton! I'm thinking about getting some laying hens Golden Comets and Barred Rocks, do they poop as much as the Cornish X's?

Not even close. Cornish X is a different thing far a smell/food consuption/poop. Wait till they are 6-8 weeks it gets worse. Layers are not a problem.

I just had my Cornish X's processed. I just ordered 20 barred rocks and plan on processing 14 and keeping 6 for laying. How long does it take for barred rocks to be table ready?

I went to collect my eggs this morning and found egg shells and then subsequently dropped an egg on the coop floor and the girls came running to pick at it. Are they going to eat all my eggs now or could it be an isolated incident?
