Hello everyone! I bought Heritage turkey poults in Early May with the plan to process them for Thanksgiving. Since I'm a noob, I didn't realize you needed to book way ahead for Thanksgiving. I was able to find someone who can process them next week, I was disappointed that I'll have to freeze them, but also just happy I was able to find someone to do it. My question is this... should I age them first in the fridge, or do they go straight to the freezer? How does the process vary if you have to freeze them? Thank you very much for your time.
