Hello everyone!
I bought Heritage turkey poults in Early May with the plan to process them for Thanksgiving. Since I'm a noob, I didn't realize you needed to book way ahead for Thanksgiving. I was able to find someone who can process them next week, I was disappointed that I'll have to freeze them, but also just happy I was able to find someone to do it. My question is this... should I age them first in the fridge, or do they go straight to the freezer? How does the process vary if you have to freeze them?
