Newbie question - First year with meat Turkeys

Hello everyone!
I bought Heritage turkey poults in Early May with the plan to process them for Thanksgiving. Since I'm a noob, I didn't realize you needed to book way ahead for Thanksgiving. I was able to find someone who can process them next week, I was disappointed that I'll have to freeze them, but also just happy I was able to find someone to do it. My question is this... should I age them first in the fridge, or do they go straight to the freezer? How does the process vary if you have to freeze them?

We did our own last year and let them air chill (it was cold outside) for a cpl days before freezing. I'm not sure if it helped or not. We did it more because we needed a break! (Did 15 in 2 days)
