newbie question, rooster or hen for meat?

This year will be my first year raising chickens. Locally there are only two breeds I can choose from when getting chicks, grazers and cornish. I am going with the cornish. Am hoping to raise 50 or so birds.

Anyways my question is, which are raised for meat? the Hens or the Roosters? I'm assuming hens? what if i just ordered 50 mixed?

The difference between rooster and hen is that the roo grows faster.

The boys are much bigger at processing time. I try to get all males, but have gotten a few girls too in my mix when I got them from tractor supply. They are all delicious. I didn't notice any difference in the meat.

At what age do you butcher ?? Or go by weight.... When I raised rabbits, I butchered when they started eating too much food.... generally at 7 weeks....
