Newbie wanting to get started in quail (Help and opinions)

I want to get start raising quail for the freezer. I am thinking bobwhites but need opinions.

It gets a little cold here in north Idaho. But will be in a shed.

Which breed has the best flavored meat?

Name of a good book with good info on breeding and raising.

At what age are quail ready for freezer?

Best advice on being successful

coturnix, 8 weeks... bobs any where from 20 to 30 weeks, depending on the strain...
