No eggs for a week, then laying again

I know most chickens molt and stop laying for the winter, right? We are in south Louisiana so I wonder how that will work here. Some of mine started laying this fall, and some started laying after thanksgiving. Everything was fine till last week. They all stopped completely for 5 days. Then suddenly yesterday they started again! Our coldest weather this year so far was 3 weeks before they stopped laying. It's been warm lately. Is it possible for them to lay year round and not stop for winter?
 
Many different things can affect egg production. Stress, sudden temp changes, and daylight are among the most common. Last week it was in the upper forties to fifties here in So. IL. and I was bringing in close to a dozen eggs in the evenings. Now it's back in the twenties and I'm lucky to get three.
 
First year layers often lay thru winter.
