Well, the turkey starter I have also uses amprolium, but the protein level is 27%. Is that a bit much for a duck?

Yes, that is way too much protein for a duckling--they should get about 20% protein--too much protein can cause "angel wing" in ducklings.

As far as their bellies being, "mushier," yes, they are--but that is just because their yolk is still absorbing--just try not to press on him there.
