No Rigor Mortis after Butcher? (no stiffness at all)

Is it possible for a roo to NOT go into rigor mortis after butcher? I butchered one yesterday evening and when we put it into the fridge the legs bent completely (others I've butchered were stiff before resting) and the meat in general felt very tender.

I'm wondering if I may be ok to go ahead and eat this guy today... any thoughts?

If I recall correctly, rigor mortis is something of a short-term phenomenon, that's to say, it sets in and then some time later the body loosens up again. I'd be peeling the spuds right now.

Correct. It generally sets in immediately after butcher and goes away after three or four days of "rest." In this case though, it didn't seem to set in at all, but I'm not sure if that's even possible.
