Is it possible for a roo to NOT go into rigor mortis after butcher? I butchered one yesterday evening and when we put it into the fridge the legs bent completely (others I've butchered were stiff before resting) and the meat in general felt very tender.
I'm wondering if I may be ok to go ahead and eat this guy today... any thoughts?
