I'm sure this has been discussed already, but I can' t find the time to research it. Is it true that once you store a fresh egg in the refrigerator, you don't need to bring it out until you are ready to use it? Also, if you don't store your fresh eggs in the refrigerator, how long are they good at room temperature? Thanks!!

I'm not sure I understand the first question. You don't need to bring it out until you use it? For some recipes (meringue e.g.) you want room-temp whites. Otherwise, yeah, I guess there is no reason you wouldn't leave the eggs in the icebox. ??

Healthy eggs can last weeks wo/ fridgin'. :)

i have heard that they can last about a week without being in the fridge, but i just feel alot better keeping them in the fridge until i need to use them.

When my husband and I lived on our boat many, many years ago, when didn't have a refrigerator, so we kept our store bought eggs at room temperature. I turned them every day to keep the inside from drying out one side. Turning help keep the integrity of the inside intact. We never got sick from those eggs. I did however keep on eye on how long I kept them. Now that I have my own chickens, I gather daily and don't leave eggs on the nest more than a day, less if we are having hot weather.

Maybe this will clear my question up: I have 7 eggs that have been in the frig for a couple of days. I have 5 that I gathered from the nest box yesterday and have not put them in the frig yet. I have a person at my work that would like a dozen. I drive an hour to work. Is it okay to take the 7 out of the frig to add to my 5 non-refrig eggs to make a dozen and drive to work with them not in a frig since the original 7 were in the frig? Make any better sense now? Tks!!

I heard that as long as you don't wash the fresh eggs, they will last on the counter for about 2 weeks or so......My gals are only 5 weeks old, so I haven't had any eggs to contend with yet! lol!

I'm sure you'll be fine. When I buy eggs at the store they've been in the fridge and then out for the ride home, which if I'm making any other stops can be multiple hours. I've also been known to leave my store bought eggs on the counter for a few days at a time and I've never opened a bad egg. So yeah, you'll be fine combining the bunch to make a dozen.

Well, that is just what my wife said to me (in a very "are you dumb?" sort of way). Thanks for your advice!
