Your local ag extensions will help you immensely with stocking rates. Look at how people farm very small plots of land. There is great knowledge there that will help you get a lot out of your land while putting a lot back into it too. Composting, rotational grazing, aquaponics, etc. Also have a plan of action for predators. Secure night pens and large dogs are my personal preference, while others prefer electric fencing, etc. I think one of the most helpful things is taking it one step at a time/adding one type of animal at a time.
I have heard of people having success running sheep and goats together. They either tie copper supplements up high enough where the sheep can't reach but the goats will, or they pen and feed separately at night.
