well I for one was up early with a certain little girl who has decided to change her sleeping schedule to confuse her mommy!! Aside from that, I was able to sneak in some long missed buddy time with my elliptical (I wonder if that counts as light work??) did some cleaning and most importantly...cuddled with my baby girl!! Spent the day playing kitchen (only fun for her!!) and making home made bread bowls and dairy-free broccoli potato soup!!

Other than that...I've been quiet, seems like I'm not the only one!!

CSB - mincemeat?? I have honestly never heard of it!! I wonder if DH would like it. Try not to laugh, but what is Suet?? All I know of that is the brick you stick outside for the birds!! I may have to start trying to make my own hot pockets now that you all have put the idea into my head. I make my own biscuits, so why not, right?!?

I LOVE my bread machine!! Okay, off to check on my bread bowls.

Beef fat. For example, back when I hunted, when you have a deer processed into hamburger they will add beef suet as deer are very lean, helped with cooking and flavor.

Yep....plain old beef fat. If you can find a butcher shop ask them to save the trimmings from the beef. Yes the suet in bird blocks is the same thing but they have added seeds and other things for the birds.

When doing the mincemeat if you feel it's a bit too heavy from the suet, you blot off some of it once the mincemeat cools and the oils have floated to the top. Mincemeat can be rather rich and that is why I don't like it as a pie but love it in small amounts like the tarts/hot pockets and in muffins or cookies and warmed then drizzled over vanilla ice cream.
