Northern Ms. does anyone process their own chickens?

I am interested in watching/helping process chickens. I want to be able to raise my own meat chickens one day in theory. I am just not sure I will be able to do it. Right now if any of my pullets turn out to be roosters I am thinking about sending them out to be processed but I am curious to know if i will be able to do it. I live in Sardis, Ms a hour south of Memphis, Tn. Is there anyone else near by who processes their own chickens or turkeys? I have a feeling either i will be fine with the process or i will never eat chicken again. REally it could go either way.

Also I interested in a chickenstock or any type of meet nearby. I would love to meet fellow chicken people. There are not many where I live.

There are several BYC'er around close to you. By close, I mean an hour or so away. I am 2.5 hours from you. If you want to know about meet ups, look in the Mississippi thread in the "Where am I where are you" section, or look at Yahoo groups. West TN Chicken Club meets in Jackson at the Tractor Supply, and just had a meeting Saturday there. That is the closest one I know for you, but I'm sure there are more.

Christina, we raise & process our own chickens. Would be happy to have you watch and/or help if you'd like sometime, I'll even send ya home with one to cook so you can see the real difference in taste & texture of home grown versus commercial raised.
We have around 50 that are ready for freezer camp right now, but I usually only do around four or five at a time because of my arthritis in my hands. It really isn't hard and only takes a few minutes per bird.
If you see just how easy it is and taste the difference I know you'll be hooked!
