If you can get her before light off the roost, or after dark off the roost she will probably be calmer. Weigh her quick and put her back, should minimize the stress. Sounds like it could have just been a glitch, so may not happen again. I've never heard that more protein has anything to do with egg size, so would be interested where that came from. I've had a few that laid really big eggs.
