We have bought a new male and he isn't mating with the female .In the southern hemisphere this is the mating season .

I don't know their age. But I think its because we just got him.
The female isn't laying.

Hi poultry guy. I also live in the southern hemisphere (obviously! ;) )
They all have different ways about them. Mine are just starting to pair off. The ones that already have mates from previous years are just starting to dance in the pond, and looking for nesting sites. The others, not decidedly paired yet, are flirting and mating with some of the females, but nothing serious yet. Two of my males are busy trying to mate each other! And the females that I really want to breed from are being ignored by the males, while the younger females are being courted..... So, it´s a very individual thing.
Probably the best thing to do is just wait. Give him time, and see how it goes.
Is it possible that he was taken from his mate when you got him?
You have plenty of time yet. last year my youngest ones were hatched in November.
Where abouts do you live? What geese do you have?
