Oh that looks SOO good. I wish that we had room for meaties. With turkeys, I coat the skin with oil and cook the skin first so that it browns. Then I turn down the temperature to slow cook the bird, and cover the breast with foil to prevent burning. You can do the same with a chicken, and it takes a lot less time.
