Now that they are laying how do I eat the eggs?

I don't date my eggs at all and, really, I'm not concerned because I know I'm eating eggs fresher by far than anything I used to get at the market. But I arrange them on the fridge shelf so I always know which are the oldest and which the newest. Then I rotate them around as older ones get used. It's like an egg skelter only on a flat shelf and they have to be manually rotated.

Hard to describe exactly, but easy to do and to use.

I do it this way as well, since I do all the cooking/chase intruders from my kitchen no one should be rearranging eggs for any reason. Only thing that messes up my system is if hubby brings in eggs from the nest boxes, doesn't bother asking where to put them, and just puts them where he feels like ...

That's not allowed here. All eggs that come into the house go into a basket until I put them away. I want to wipe down the soiled ones, and I'm a bit of a germ-a-phobe, so I don't want anyone else dealing with cleaning eggs in my sink. I'm positive he would not clean the sink and sanitize it afterward,

I do the same as others ,quick rinse or scrub if dirty and refrigerate. These homegrown , free range beauties are the bomb! far fresher and better tasting than store bought. I don't have to mark them as they are used quite quickly!

I feel like the odd one out here. I do wash my eggs, though mostly they come in clean. This is the method I have settled on after trying various ones: I make up a sink with warm water, a drop or two of Dawn dish soap and a little shot of bleach. I put the eggs in a basket and dip them briefly in the sink, then lift them out. I rinse and then wipe with a wet paper towel, dry with a cotton dish towel, and write the date on the big end in pencil (1/3). I put them in cartons and they are ready to use or to sell. My customers have told me they appreciate my eggs because they are always so clean and have the date on them.

I have no concern about the eggs not lasting more than three months; my customers buy from me every week, and any eggs older than three weeks get hard-cooked and eaten as snacks or made into egg salad. Should I get more eggs than I can sell or use, my dogs will be happy to enjoy the surplus scrambled with their kibble.

What a fun thread! Throwing in my hat...

I am only in my fourth year of chicken keeping and keep a small flock (10 right now) of hens. My birds are pets first with the benefit of eggs. I collect daily, put eggs in a bowl or basket, and eventually put them in cartons in the fridge. I do not wash eggs, but will wipe off any soiled ones if I am giving them away. I do date them with a pencil.

Edited to add (accidentally posted too soon): I also rinse shells and put them in a little countertop oven. Once the sheet is full, I bake for about 12 minutes at 200° before feeding them back to the flock. Not necessary, but I want to be sure nothing’s growing on them. I also put pointy side down.

As a side note... someone mentioned exposing your kids to wholesomeness or something like that. I totally agree. I also do the same for my flock. I used to keep a super clean run. One year I tried sand, but it got too mucky. It has taken me awhile to build it up so it is “living.” I’ve got a way to go, but now I see the girls having a good time digging and looking for bugs, etc. My hope is it provides entertainment and exercise. It seems to be working, but they do still hunker down a bit when it rains.

During the summer I had up to 8 dozen eggs in the refrigerator. Guess I'm not as organized as you because I got confused and had to look at the slips of paper with the dates. Then again, There are 3 other adults in the house (two of them adult children), so keeping any order is just not possible for us. But I could see that it might work with less activity here at home. I'd worry that there's that one dozen eggs from 6 months before that I somehow skipped over...
