Do any of you have creative ways to sell your smaller sized eggs? We got 8 new chickens this spring, they started laying a month ago and 5 of the 8 are laying medium size. :( Luckily even though our big girls are molting, they're still "putting out" so I have most of my egg customers covered...but we have an over abundance of the mediums and I've frozen enough for an army. I'd really like to sell them but not sure how to market a smaller egg besides charging a buck less or something.

Since they just started laying maybe the eggs will get bigger with time, I know my bantam eggs get larger over a few months after POL.

That was my hope but looked them up and they are all "medium" layers. I would SWEAR when I ordered they said large because I wouldn't have ordered them otherwise. Ugh. Sure don't want to make that much chicken soup!

I throw a few in a carton with my bigger eggs too so it looks like a variety of sizes and colors. I charge a little less too.

I always tell people that if they want a really good moist cake, to add an extra mini egg!

Darn. Are you sure your customers only want large eggs? I bet someone would buy them for a little less than the large ones. I know my co-workers with kids like my bantam eggs because the kids like the cute factor.
I know my excess eggs I feed to the dogs, cat, and chickens. We are not big egg eaters in my house.
