Last year I made some sweet pickles. Go to the canning section of the market and you should be able to find a packet for making pickles. I think the packet is green. You mix the packet with water, salt, and vinegar. Essentially you just slice the cucumbers, put them in jars, and pour the hot pickling brine over them. You process the jars for about five minutes or so. The pickles are quite good. Make sure your cucumbers are not bitter, though. One bitter cucumber can ruin the whole batch. As for the tomatoes, I make tomato sauce. I cook them a bit and run them through a food mill. Then I add a little chopped onion, chopped peppers, and maybe some garlic and basil. I do simmer it a bit until it is reduced and thickened. Be careful not to scorch it. I use the resulting tomato sause in spaghetti, meat loaf, etc. I do add powdered citric acid to make sure it is acid enough to be safe.

I made fresh salsa tonight for Nachos with three kinds of peppers (two sweet and one hot), cucumber, onion, two kinds of tomatoes, and a little salt. YUM! Just need to find
time to make big batches of it.

Make tongue pickles (they are cucumbers, not tongues lol!). They are a yummy sweet pickle made with brown sugar and apple cider vinegar.
