K- for my BFF's visit I am making:

Pork shoulder stuffed with roasted hatch chilis, garlic, and cilantro. Wedged into pan with vidalia onions, potatoes, tomatillos, and more roasted hatch peppers.
Refried beans---homemade (I miscalculated the water-absorbtion, and now have 2 GIANT pots on the stove, threatening to boil over)
Salad
Chips & Salsa
Vodka peach pie.
