I find that works better with the dark meat, again, worship at the plug of the crock pot. 1 or 2 jars of salsa or picante, a jar of chicken broth to rinse out the salsa jar, dump in chicken, turn on and ignore. Erm, I'm guessing on amounts because I don't make small portions.

Serve over red beans and rice. Makes kids and DH happy. I find it boring, but they like it.
 
I like to dump the chicken breasts, half a big jar of salsa or picante, a can of black beans, a can of Rotel, and a can of corn in the crockpot in the morning. Then a half hour before serving, stir in two cans of nacho cheese soup and shred the chicken breasts. Makes a great chip dip or tortilla filling.

I put beef short ribs in the crock pot this morning with a generous helping of dales marinade.

Of course due to my foresight (only happens twice a year) DH will have shot something by the time I get home and want to eat THAT for supper instead....
