Somewhat/kind of raw fish. It's cooked with citrus juice, not heat.

And that there is more than enough for me to not go near it with a 10 foot pole.

How do you cook something without heat?

Even fish that is soaked in lye first is cooked here.

I brine turkey and pickles. They all get cooked with HEAT.

I still say it's raw fish.
