I want to try the blue and purple potatoes sometime too, pbj. Think of the pile of purple whipped potatoes I could make...

Purple potatoes don't make good mashed potatoes. They either aren't waxy enough or are too waxy. I forget which way it goes.

Purple potatoes don't make good mashed potatoes. They either aren't waxy enough or are too waxy. I forget which way it goes.

Sigh.

I don't care for the flavor of the purple ones in mashed potatoes.

They're good baked but not mashed.
