Mudbugs are good! We always called them crawdads.

I've never heard of menudo and it sounds....different.

I've never heard crawfish called mudbugs, but I'd try them. Have no idea what menudo is but would probably try that too.

I don't care for the flavor of the purple ones in mashed potatoes.

They're good baked but not mashed.

I go havsies with yukon gold or red potatoes. Makes for good stiffness and good flavor.

I made menudo this weekend. There are 2 gallons still in the fridge.
