We have tons of eggs here right now, how about you? What do you do with your excess eggs? We collect and cook what we can, hatch a few, and the rest we give away or feed back to the birds.

I learned about this last year, but haven't had the need to try it yet. It's the oldest method for egg preservation--very interesting!
 
I have a few regular customers that usually buy on a weekly, bi-weekly or monthly basis but the virus and other happenings have interrupted that. They get my newest eggs. I give away eggs to family or friends that are 8-14 days old and feed my animals any over 15 days old. And I still find myself with egg overload, all it took was one or two not needing eggs in a week. I just boiled 90 eggs to feed back and still have around 16 dozen (not including the almost 3 dozen I collected today. I have 45 hens and 2 duck hens.

Here's one day's egg collection. I didn't get any E.E. eggs that day, usually I get 2-8 from them.

I love to bake cornbread for my chickens, which takes a couple of eggs and old milk.
I found I could buy a 50 lb sack of cornmeal from our local bulk food store for $17. That's downright cheap. And turned into cornbread with added eggs and milk, the protein is a good bit higher. I've even been known to add frostbitten old meats, chopped finely, from my freezer.
And since I've had to pen them up, I try to push the mower every day and collect half a bagful of grass clippings to give them their vitamins.
 
I have people waiting on what I gather darn near every day. I had to take down my "Fresh Eggs For Sale" sign because I had so many people wanting them. I have 23 hens and get 18 to 22 eggs a day.
I have finally decided that I will only sale to neighbors and pretty girls, its working out OK for the neighbors but I haven't seen many pretty girls lately. They always send their husbands. LOL.

Oh my goodness, I think it’s tricky when we have 18 or more!!!!
Do you have passing traffic, put out a cool box with eggs in , a container labelled donations and empty cardboard egg trays for 6 eggs , make a sign and ask for donation for eggs
If no one passes by then neighbours? Always happy to receive eggs from us 18 at a time and they reciprocate with veg and fruit
Freezing after whipping into a bowl? Or feeding back to your chickens !

I know.... I know.... but I will say it anyways It sounds like maybe you have TOO many chickens.

I have 3 laying hens. I get 3 eggs a day. I do not sell my eggs.
We eat a lot of eggs.
I will make pickled eggs or share them with a neighbor if I find I am getting back up.

My MIL was big on water glassing extra eggs for use over the winter.
I have never tried it but there are several YouTube videos on how to do it.

What recipe do you use? I like this idea.
