OK, talk to me about hatching chicks in egg cartons.......

I keep seeing photos of chicks hatching out of eggs placed in egg cartons. What's this all about? How do you do this and why? Do you keep them in the cartons the entire hatch and if so, how do you turn them? Super curious ......
