Okay.....I did it..well WE did it

Buy the best Food Saver you can afford. I'm on my second one in 40 years, just used up the first. Also look into those absorbent pads for putting under the meat in the bags.. They help protect the bag from bones poking through as well as soaking up the drippings from the flesh.
 
Thank you so much for your post. It is reassuring to someone new who is planning to try this for the first time this year. I have watched the videos on utube as well and was thankful to find instructions from someone who hasn't done it for the past 20 years already as I am sure your troubles and hints will be very relevant to my non-pro status :)
