Al, I wouldn't even try to make that lasagne. I'm sure that it's beyond my ability to have that much patience.

My mom's cannelloni takes 2 or 3 days to make, depends on the filling. It's a recipe she got while we were stationed in Italy.

G. K. Chesterton

The object of a New Year is not that we should have a new year. It is that we should have a new soul and a new nose; new feet, a new backbone, new ears, and new eyes. Unless a particular man made New Year resolutions, he would make no resolutions. Unless a man starts afresh about things, he will certainly do nothing effective. Unless a man starts on the strange assumption that he has never existed before, it is quite certain that he will never exist afterwards. Unless a man be born again, he shall by no means enter into the Kingdom of Heaven.

When I say day's that refers to the Riccota and Mozzeralla cheese that I make Homemade and it takes 2 days to get right. Like pulling and shaping the Mozzeralla every two hours for 6 hrs and then chilling and aging for two days.

Faerie : I love to make cannelloni and the process is very similar to the Lasagne...........

I've made mozzarella cheese. Reminds me, I still have vegetable rennet in the fridge. Might make some this coming week. There's nothing quite like making your own cheeses. I make yogurt too, I prefer Greek pressed yogurt. Mix it with dates & honey, or whatever else I feel like mixing in it. Or just press the yogurt into yogurt cheese and substitute the yogurt cheese in recipes calling for sour cream (which I hate), or as dips for chips (pressed yogurt and flaked red salmon makes an awesome dip). I'm great with small stuff like that... it's the entrees and bigger side dishes that end up kicking my butt. Problem is, I don't know how to do the "basics", such as sauteing, braising, etc. I've never learned. Considering taking a cooking course to figure it all out... but with two evening classes this semester and a full time job and a kid, I don't know when I'd be able to fit it in.

Howdy everyone....hope all is well with you folks. I've just had time to lurk for the past 2 weeks. This is the first time I've been without company in over 2 weeks. We've had family in from Indiana and on top of that my daughter and husband and 2 grandbabies have been here for 2 weeks. It's been a blast but I am pooped. Feels good to just do what I want for a change.

Well, this storm has really made me re-think my addiction with my chickens. I guess I've got to take Monty's advice and start my list of order of what I like best in them. It's time to downsize....until we move which probably won't be until late spring or mid summer. I DO NOT like seeing birds suffer like some of them did...and I'd rather sell some of them and rebuild when we have adequate facilities after the move. Ooh...it's going to hurt.

Al I am starting to get eggs from my Brahmas!!!! I got three today which is great cuz I only got 3 hens!!!! I opened one and they are fertile as well so come spring I am gonna start hatching them, I am going to do some experimenting to better the LG, I have got some ideas that may help stabilize the temp, thinking that some insulation on the outside would probably fix it with it being a foam bator dont ya think?

Well when you downsize look at it that you are being such a good enabler to the rest of us!!! I know that it is hard to do but you have a very supportive group if ya need any!!! Right now I have 7 breeds but my goal is to at least get to 5 but the first thing I gotta do is get rid of my BTW Japs!! Anyone interested??

Q : Good news on the LB eggs fertility, they do well and lay real consistant big eegs and they feather and color out early so culling can be done early. I think it's a good idea on the insulation over the LG they are notorious for temp fluxes, that should also help you get better control of your humidity. Also on the LG temp knob take that off and put on a larger disk like a poker chip something like that, then when you turn it to make an adjustment your more accurate and pricise.

Tandy....I already started them but that doesn't matter. Give me a call ....I plan on being home and getting some things done.

Q...I think it took seeing my 10 "teenagers" dead and the combs on some of my roos look frozen stiff and their feathers frozen stiff to make me see how DUMB I've been. I sat in the truck at the pens a while ago and was studying the birds out on what to get rid of. It's hard to get rid of birds that you like and hatched out. But, I'm not seeing more of this because of what I want. I think I know what to start getting rid of but my DH and I will go out together tomorrow and assess the situationa and them I'll start posting. Are you still interested in the cochin pair?

Al I am glad that you brought that up I think that there is a old washer with the big nobs on it in the dump so I may brave the brush and hike back there and get a knob off of it!
