'old fashioned' incubator.....erm..help needed - *pics*

Well if it is like mine, you turn it clockwise to increase and counter clockwise to decrease.
 
No, a wafer increases by turning it counter clock wise, decreases by turning it clock wise, by doing this when you turn it counter clock wise you are opening the gap between the wafer & the thermostat which makes the wafer swell bigger before it can shut off the switch & there for it heats up more.
 
i just cant get the temp down. its over 45 degrees in there! i tried turning the wafer one way..it gets hotter, turn it the other, it gets hotter. leave it mid way, it gets hotter.
have unscrewed one bulb..guess what...its still too hot in there!

Holy cow, 45*C is definitely cooking!

I have a suggestion, use a thermostat. I recommend ones that reptile keepers use, such as Ranco thermostats . They are incredibly efficient. Though you might be able to find a cheaper, just as efficient thermostat in Belgium. I do not recommend using a dimmer to control the heat. The reason is, is that you have to fiddle with it to get the exact temperature. But if the temperature in your house changes, and you don't adjust the dimmer to the change, the temperature will be off. The thermostat does that automatically to keep everything stable.

Your wafer is probably bad look at it is it swelling or is it flat, either way i would change it, there is ether (the chemical) in the wafer, that's what makes it swell when it is exposed to heat, change the wafer, & it takes at least 3 hours to settle down, dont expect to see changes right then.

ok did as you said, kept turning until it was pushing that bar down and the lights stayed off...and yipee we'v got the temp down to 36!!

so now some little adjustments to get the temp up a bit more and we're nearly there!!!
