Any way to breed chickens so, how they were in the old days? Like, smaller, doesn't lay near as many eggs. The way they used to be. Would I need to breed my chickens several generations down? I will be feeding them like the old days also. Scraps, corn, free range. All that good stuff. Any help is appreciated!! Thanks in advance!!

If it were me, I'd start with a breed of that description. Your task will be much easier if you start with a line of birds that resemble what you are looking for. That would be easier than to try and reverse engineer modern breeds.
Genetics in general dictate that the bigger the bird, the fewer eggs they lay and vice versa.
The following chart from the America Livestock Breed Conservancy is about the old breeds.

ALBC also has many good articles on husbandry of heritage breeds.
