I don't think it's the age of the birds that is in question here, I think it's the health of those layers. Of course, there is no telling how healthy the broilers we get from the grocery store are either...

That's just it though, meat in the supermarket has a good chance of being an unhealthy animal. I know I just read somewhere about pig farms using "downer" pigs for meat. These are apparently the ones so ill that they can't make it to the slaughterer without being pushed or carried by a forklift. As far as school food goes this probably isn't anything unusual.​
