So..... what is Overo

That was a stupid explanation if you aren't familiar with Paints. I'm fixing it.

There are 4 main "patterns" in the Paint horse breed. Solid, Tobiano, Overo, and Tovero - Tobi X overo. There are also different patterns within the Overo group. I won't go into all that.

Overos look like you took a solid colored horse and threw white paint on them. The white should not cross the back. At all.

Processing a few extra boys to turn into chili, tasting some honey, and playing with the Instant Pot. The boys were chilling in the 'fridge and are now in the sauna of the Instant Pot. Planning some tomatoes for next year, or thinking about taking a couple of shelves out of my mini greenhouse to have some during the winter too. There's only enough space for about 1 full size tomato plant in there, though.

Thanks. So if I get it, Overo is the only white pattern that doesn’t cross the midline of the back. Does this extend all the way up neck too?

So a Tobi would be a paint where the color does cross the back and a Tobi x Overo would be mostly white with a splash of color?

It can. It can also cross the neck.
