I take a rib steak. Season with fresh black pepper, garlic and cayenne. Smoke at 150-160 until internal temp of 125. Remove from smoker. Pat of butter into hot cast iron skillet immediately put steak on it for 20 seconds. Another pay on top while it’s doing this, flip after 20 to sear the other side. Pat of butter on top. Plate.

Perfectly done.
 
How's baby Crispy?
He was sleeping but he thought I had a snack.
