On-farm processing guidelines for Pennsylvania

hello,

I'm finding it difficult to get in contact with anyone in either the county extension or the PDA in order to find out what exactly is involved in Pennsylvanias sanitary inspection for on-farm processing.

Has anyone gone through this in PA? If so do you know where to get the paperwork and what they are looking for?

Also I'm unsure of some of the farmers market rules. Like eggs need to be sold within 5 days of lay?? Also need to be stored under 40 degree even at market. Literally every farmers market stand selling eggs has them sitting on the tables all day. Are these rules simply not enforced?

Working on starting up a farm and finding all the questions and the inability to get answers very frustrating.

For the eggs, maybe they are selling them as "hatching eggs", those should not be refrigerated and are good for at least 10 days. I think that's what I'd say if an inspector came and said I had to change things.

Not sure that would help on the processed meat birds.
