One-dish recipes!! Please post yours!

I'm not all that creative in the kitchen. I'm also not much of a 'chef'. I make what I know how to, and that's about it. Every so often I'll find an easy recipe and try it out, and most times it's pretty good!

My problem is that I hate to spend forever in the kitchen, and I also hate having 3, 4, 5 different pans to wash, just for one meal!

So please post your favorite 'one-dish-meal'. It can be baked or stove-top, grilling is not my 'thing', but post away if you have any!

I'll post one that I make on occasion. It's very quick and filling, and oooh so good! And the best part is that the only dishes to wash are the pan and spoon, strainer, plus however many bowls and spoons are needed to eat it! And maybe a knife for the b&b

1 lb. Hamburger
3 cups cooked rice
1 can cream of mushroom soup
2 cans mixed veggies (one with juice, one without)

Brown hamburger in dutch-oven type pan; drain and set aside.
Measure the equivalent to 3 cups (m/l) white or brown rice; cook until done.
Add mixed veggies with juice and soup mix; stir.
Add the other can of mixed veggies and hamburger, mix well and enjoy!! Salt and pepper to taste

I pre-heat the oven to 325 or 350.

Split chicken breasts go in one half of a large pan.

Large cut potatoes go in the other half of the pan.

Season the chicken and potatoes.

Roast them in the oven, basting occasionally.

I have the exact recipe from the magazine I got it from, if you're interested.

I haven't done it yet, but I don't see why you couldn't add at some point broccoli or broccoli-rabe to the roasting pan.

I have another one!

It's kielbasa, cabbage and carrots.

I kinda just made it as I went along, but I sliced and them browned the kielbasa in a skillet.

You can parboil the cabbage, carrots and onion beforehand if you wish, but I didn't.

I removed the sausage from the skillet, and added chopped onion and sliced carrots to the skillet. I cooked and stirred for a few minutes, and then I added sliced cabbage. I cooked and stirred until it was browned, then added a bit of chicken stock. I covered, and cooked until the veggies were done, removing the lid and stirring now and again.

Forgot about the sausage ... I tossed it back into the pan a few minutes before I thought the veggies would be done, so that the meat could heat through again.
 
I have NEVER liked meatloaf until my MIL came along, and she makes THE best. You really outta try it, it doesn't sound like much but tastes delicious. AND will feed an army of people.

2 - 2 1/2 lbs ground chuck
6 slices bread, moistened
6 eggs
1 small bottle ketchup, 2/3 IN meatloaf 1/3 on top
4 TBSP worchestershire sauce
salt and pepper to taste

In a bowl mix all ingredients (hands work best), place in shallow baking dish and spread remaining ketchup over top of meatloaf, bake at 350 until done. Usually 1 hour to 1 1/2 hours depending on how thick it is and how well done you want it. If it starts browning too much around edges, just lay a piece of aluminum foil on top.
 
You can cut the amount of butter if you like.


Cuban Chicken

½ cup butter
1 medium onion, chopped
1 red pepper, chopped
1 green pepper, chopped
4 cups tomatoes canned or juice
Pepper
Salt
2 lbs. chicken pieces
1 cup rice

Melt butter in Dutch oven or skillet, add onion and cook until clear. Add peppers, tomatoes, salt, pepper and chicken, bring to a boil add rice cover and simmer 1 hour.
 
last night I came up with something different last minute. Im out of gas for the stove so I had to use the Microwave. I cooked up a pound of hamburger in a large casserole with salt pepper and onion. Added about 1/2 c chicken stock and 1 can of cream of mushroom and mixed till combined with the meat. Then added 2 cups seasoned dried bread stuffing cubes and 1/2 cup of canned peas. I was surprisingly very good. Sometimes I experiment like that with disastrous results.

INGREDIENTS
1 ½ cups quinoa
1 tomato, diced
2 ¼ cups vegetable broth
1 teaspoon dried thyme
1 onion, diced
2 garlic cloves, minced
1 tablespoon olive oil
2 carrots, peeled and diced
1 bell pepper, seeded and diced
1 cup fresh or frozen green peas
1 bunch of broccoli cut into florets
Any other veggies you feel like
Feta cheese to taste

DIRECTIONS

Put everything in a large pot except the cheese. Bring to a boil, cover and let simmer on low for about 20 minutes. Add crumbled feta cheese, stir and serve.

If you like cabbage rolls? These are called, Quick pigs.

1 small head of cabbage
1lb ground beef
1/2 cup chopped onion
1/2 cup rice
1/2 tsp salt
1/4 tsppepper
1(101/2oz.) tomato soup
11/2 cup water
1/4 cup Italian cheese( Optional)

Chop cabbage into medium pieces. Spread in bottom of a grease or sprayed 13x92 inch baking dish.
Brown meat and onions in large skillet, breaking up meat with a large spoon as it cooks. Stir in rice. salt pepper. Spoon mixture over cabbage. Mix together the soup and water and pour over mixture. Sprinkle with cheese. Cover with foil and bake for 1 to 1 1/2 hrs. Preheat oven to 350.This works good with tomato sauce too. Just add a little sugar to get rid of the bitterness. This is my aunts basic recipe. When I make it I use 5 to 7 pounds burger to a meal for us.
