GREAT IN THE SUMMER OR FOR A POT LUCK DINNER

DIG DEEP SALAD

1 head lettuce (shredded)
2 med. red onions (sliced)
1-2 green peppers (sliced)
3-4 ribs celery (chopped)
8 oz. water chestnuts (sliced)
10 oz. frozen green peas (uncooked)
2 c. Hellmann's mayonnaise
Romano or Parmesan cheese
3 eggs (hard cooked)
4 strips bacon (cooked and crumbled)
1-2 tomatoes (sliced)

Layer first six ingredients in a serving bowl in order, beginning with lettuce. Spread mayonnaise over the top layer. Sprinkle with cheese. Do not stir. Cover and refrigerate. Garnish with sliced eggs, bacon and tomatoes. Serves 12-14.

i buy the large pork loin and cut it into 3 and freeze them.. cheap meat.. for one i cut into 1/2" cube... brown in small amount of oil.. add 2 jars of chunky salsa, dash of garlic powder and a little left over wine or tequila. simmer covered till tender.. about 1 hour. i serve it with refried beans, rice , and flour tortillas..you can add shredded cheese, quacamole, what ever you like
 
I Love 1 skillet meals here are my favorites

I take chedder brautwurst cut into chunks in heated skillet.Then chop sweet onion into large chunks,Then 4-5 yukon gold or red potatoes into large chunks and leave skin on.Then cut up a green pepper in large chunks and a yellow squash or zucchini.Add season salt and let cook all together till veggis are done.

My DH would eat this 3 times a week if I let him.


In a crockpot I add 2 quarts of drained green beans.
Then add 3-4 chicken breast on top of beans then spoon 2 cans of mushroom soup over chicken pieces then sprinkle with bacon bits or add left over bacon from breakfast and cook on low for 6-8 hours.
Lordy lordy watch out.
 
Here are some favorite one-dish ideas:

~Pilaf – butter 2 TB, onion 1 small chopped, rice 1 cup, beef broth 2 cups (or 1 cup broth & 1 cup water), leftover cooked beef roast, chopped – 2 qt saucepan -- saute onion in butter in saucepan, add rice and cook until rice is slightly browned, add in broth, cover and cook until rice is tender, add in beef, cover, let sit to meld flavors and heat beef.

~Risi Bisi – chp. onion, butter, chp. ham, cooked minced chicken, 3 c. broth, 1 1/2 cups rice, Parmesan cheese – 2 qt saucepan -- cook onion in butter, add in chopped ham and cooked chicken, stir, add in broth, and rice, cover and cook until rice is done, add in cheese and stir well.

~Greek Chicken & Zucchini – chicken thighs, lemon juice, EVOO, minced garlic, dried oregano, sliced zucchini – baking dish -- place chicken pieces in greased baking dish, drizzle with fresh lemon juice and extra virgin olive oil, sprinkle with garlic and crumbled oregano, top with sliced zucchini, cover with foil, bake at 350 for 45 minutes or more until chicken juices are clear when pierced with a fork or knife, and zucchini is tender.

~One Pot Pasta – 1 TB EVOO, 1 # ground beef or sausage, chopped onion and garlic > brown together; add 1 cup each water, pasta sauce, small pasta (elbows or small twists or small penne) > cover, bring to a boil, simmer 20 minutes; top with mushrooms, thin strips bell pepper >cover and cook 5 minutes; stir in 1 cup grated mozzarella cheese >cover let sit; top with grated parmesan cheese - use a large heavy stove-top pot with a lid, like a Le Creuset French oven.
 
smoked sausage & potatoes:
Cut up your favorite brand of smoked sausage into 1 inch pieces & brown in a deep skillet, along with coarsely chopped potatoes, bell peppers, celery & onion, 1 can of chopped tomatoes. Add a small jar of spaghetti sauce & simmer 20 minutes or until potatoes are fork tender.
 
Another one we love, brown some gr beef in a skillet with onions, drain and set aside, add diced potatoes to skillet and brown and then add the ground beef/onions back to the same skillet. Add a can of Mushroom soup or cheese soup, whatever you like and just heat through. Oh, so good.
Edited to add: if too dry add some milk and season to taste.
