So many good threads running about canning and cooking and then there's the cookbook... oh my goodness, I am so gonna gain weight!

I do this all the time when I'm too tired to make a "large effort" dinner.

Set your own to 350 degrees (or adjust for elevation)

In a large glass baking dish with a lid, put your choice of meat (chicken breast, pork steak/chops, or fish work great). The meat can be frozen.

Add some gravy, a marinade (Italian dressing works nicely), or BBQ sauce.

Bake for 60 minutes if the meat is frozen, or about 45 if it's thawed. It will come out tender, juicy, and flavorful.

While your meat is baking, you can make your side dishes on top of the stove.

Just a tip here fellow members.........you can place a FROZEN pot roast (of any kind, even chicken)into your crockpot with the veggies and slow cook all day and it will be perfect!! There is enough liquid from the 'frozen' meat to make it's own sauce. I do this all the time in the winter months. Or you can put a bottle of your favorite salad dressing over the meat with the veggies and let it do it's own thing. Yummy. I never add water to any pot roast, if I add anything at all it would be stock, but never with the meat frozen.
 
I do the roast in the crockpot with only the dry liptons onion soup, or mushroom onion. Do not add any water, just put the roast in the pot, pour the dry soup package over the top, put on high and cook all day. It will make the best juices. I could not believe it the first time I heard of this as I always thought the roast needed water, but it makes its own yummies. The smell is just wonderful.
 
Here is the best Chicken casserole dish ever(easy too),

Place boneless/skinless chicken breasts in bottom of 13x9 baking dish.
Cover each piece w slice of swiss cheese.
Mix 2 cans of cream of chicken soup w 2 cans milk, you can use any creamed soup, what ever you like can be used.
Pour over cheese/chicken.
Cover soup mix w box of chicken stove top stuffing mix.
Bake 350 till done. I bake at least 1 1/2 hours to 2 hours.
 
You didn't say it had to be a meal, but this is definitely one dish.

Spray a glass or ceramic plate with cooking spray or rub it with butter.

In a heavy skillet combine:
3/4 cup raw nuts
1/4 cup sugar
1 Tablespoon butter
1/2 teaspoon cinnamon
1 eentsy dash cayenne.

Heat on med-high until the sugar starts to melt with the butter.
Shake the pan to distribute, but don't stir until it starts to turn brown.
Stir until golden brown and pour onto the plate.
Break into pieces when completely cool.
 
Oh, I have a great one dish recipe for hamburger! I used to make a slightly different version of this using broccoli instead of green peas, and both are good, so you can vary the veggie in this one. Here it is on youtube. I don't use nearly as many peas as she uses, I use about a cup and a half, and I mix the peas in with the hamburger mixture. I do use more cheese (a lot more cheese!) Also, the last time I made it I added about 1/2 cup sour cream with the cream of mushroom... and, finally, I used Tater Tot Crispy Crowns instead of the regular sized Tater Tots. YUMMY!

Thanks for the welcome Oz Hen. You won't be dissappointed, everyone who I have served this to, now makes it as well as their friends and familly. I make mashed potatoes and extra chicken gravy to serve with it. Rice is good as well. Everyone calls it "Robin's Chicken" lol. Enjoy.
