Our took some time to level out as well. Our ducks started off laying with a bang and then we started finding soft shelled eggs everywhere. Discovered that my husband was only providing oyster shell "ocassionally" instead of on a regular basis. If you continue to get soft shell/no shell, provide the oyster shell free choice (if you don't already).
Forgot to add, the cold doesn't affect their laying so much as the lack of light. Try putting a light in their coop and leave it on until 8 or 9pm - this will help keep the laying going.
