Expensive doesn't necessarily equate to accuracy.
The Thermoworks RT301WA https://www.thermoworks.com/RT301WA is guaranteed to be accurate to ±0.9°F (±0.5°C). And calibratable.
The Brinsea Spot Check has accuracy of ± 0.2ºF

The Govee temperature sensor is accurate within ±0.54℉, and humidity is ±3%RH (Calibration is supported).

Most thermometers, regardless of price are only supposed to be accurate to ±2℉. That isn't close enough for incubation. Not to mention that many don't meet that accuracy range.
It is all in the fine print.
 
I've built a few incubators. I've used the incu-kits from incubator warehouse, stc-2000, itc1000 controllers and a tiny circuit board from Bulgaria. They all had their advantages (stc-2000 was the best) but they were all needing calibration out of the box. The two incu-kits both failed before the first incubation was complete.
I bought some ancient sportsmen incubators and a hatcher from a friend. They maintain temperature well but have no digital display. However, the GQF dial thermometer I got with them is off by at least 2 F.

My Govee Bluetooth was spot on for temp, and reading .2% high for humidity.

I checked temp by sealing in bag, and stirring in ice with enough water to allow it to stir easily. With lots of ice (mostly ice, enough water to make ice just float) temp will be 0c.

Humidity is done with table salt. Tablespoon of salt and 2-3 drops of water onto a container. Place container and humidity sensor in sealed environment. 8-10 hours later you are looking for 75% humidity.Secret is not getting salt too wet. Wet salt will put moisture in air while dry salt will suck up anything over 75% if that makes sense.

Now, I’m using my calibrated device to set my Yascom 56 egg ‘bator. It’s in its spot, and so far I’ve adjusted it 1.8 degrees. I’m using the average temp once stable to determine temps. Right now I’m trending 37.4c I’ll give it another hour and change the calibration another .1.

Humidity is a different animal. I’m indicating 32% on display while my Govee is 48.7%. Unfortunately there’s not a calibration for humidity. I intend to run the Govee with the eggs, so no big deal.

Bottom line, calibrate and check your instruments.You need faith in measurements.
