Okay, I could go into long details here but I'll just tell the facts and I'll answer any questions. Basically I have two 5-6 week old guineas roosting on my chicken fence (shares a border with guinea fence). I did not know they could fly that high and now I can't get them down. They have some grip! Will they stay up there all night? Also, the other three guineas (also 5-6 weeks) are huddled underneath them. Will I be able to get them back?

Time for some WING Clipping! Or a a netting over the top..

How high up is the fence? I had an escape guinea that could fly up into 50-60 foot trees with no problem. My best bet would to get a broom or something and try to nudge them off to where they would fly back down into their pen.
 
Uh huh, they will stay up there til an owl or raccoon grabs them. They can't see in the dark, so yah, they will stay put... like sitting ducks. I'd push them down with a broom and get them in the coop or they won't be around long. Now is the time to be extra forceful about them cooping up each night, and make it a routine. They already think that have chosen their own routine, so you have to be consistent if you want to change it.
 
I got them in last night without to much trouble and today they've hung around their house, roosting on the door. Which leads to another question- they'll remember where their food and water is, right?
 
Yep, but if you give them a treat of something yummie every night when they come in, they'll remember even better
