Open back wound update. Euthanize?

It's not too late. Just resume the wound care protocol you began.

The reason for keeping the wound moist is to nourish and nurture the new tissue growth and to discourage bacteria.

The wound would heal eventually if allowed to scab over. However, and this is from personal experience caring for second and third degree burns on a good one fourth of my own body, as well as wound care on my chickens, new tissue grows in much, much more quickly if kept moist.
 
Ok. I have been getting conflicting info. Some people who work in trauma and wound care centers for people have said to let it dry and scab over. Others have said keep it moist. So we have not used ointment in the last 2 days. Is it too late to start back?
I would agree with keeping it moist. Saline can be used as a gentle cleaner, and then I would use either a betadine and sugar mixture with a dressing, medihoney, or plain nesoporin. A friends dog recently was skinned on the road after being hit. My vet prescribed the the betadine/sugar mixture for a couple of weeks, and then switched to Silvadene cream. The dog, our walking buddy is recovering well. That wound is too deep to just let it dry out and scab over. Good luck.
 
Silvadene. That stuff is miraculous. That was what I was given to treat my burns and I used some I had left over from that to treat my scalped chick. It's a prescription wound dressing, but if you can get some, it will not only heal the wound on your hen's back much better than any over the counter wound dressing, but chickens hate the taste and will not peck the hen's wound.

Chickens aren’t people. Their skin is a different biology than human skin and heal differently
 
I would consider administering some antibiotics as the claws of the eagle probably carried quite nasty bacteria whichmight lead to internal festering.
